Ingredients
For the pie crust:
- 2 cups all-purpose flour, plus more for dusting
- 1/4 teaspoon salt
- 1 cup chilled unsalted butter, cut into small cubes
- 1/4 cup ice water
For the filling:
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 large carrots, chopped
- 1 celery stalk, chopped
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 ounces cremini mushrooms, sliced
- 3 tablespoons chopped fresh thyme leaves
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- Salt and pepper to taste
Instructions
Make the pie crust
- In a large bowl, whisk together the flour and salt. Add the butter and use your fingers to work it into the flour until it resembles coarse crumbs.
- Add the ice water 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C).
Make the filling
- Heat the vegetable oil in a large skillet over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
- Add the chicken and cook until browned on all sides.
- Add the mushrooms and thyme and cook until the mushrooms are softened, about 5 minutes.
- Sprinkle the flour over the vegetables and cook for 1 minute.
- Gradually whisk in the chicken broth and milk until the sauce thickens.
- Season with salt and pepper to taste.
Assemble the pie
- On a lightly floured surface, roll out the dough to a 12-inch circle.
- Transfer the dough to a 9-inch pie plate and trim the edges.
- Add the filling to the pie crust.
- Roll out the remaining dough to an 11-inch circle.
- Cut the dough into 1-inch wide strips.
- Weave the strips over the filling, forming a lattice crust.
- Brush the crust with milk and sprinkle with salt.
- Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the pie cool for 10 minutes before serving.

- For a richer flavor, use dark meat chicken instead of white meat.
